The third piece as part of my Vegetable series. Gai lan will always remind me of my childhood. Those late Sunday afternoon lunches at my favourite Boon Tong Kee Chicken Rice Shop. As a young girl, I loved staring at the open kitchen in the shop. I remember watching the chef cook bunches of these delicious vegetables. She would expertly blanch it in a large boiling pot of water. Then transfer it to a sieve to shake off all the excess water. With one swift motion, she would then pop the Gai Lan onto a white melamine plate and ladled this concoction of dark, salty sauce over the vegetables. The plate would arrive at our table, steaming hot, glistening with the dark sauce and garnished with crispy shallots. As a child, I never knew what the sauce was but now as an adult, having spent hours cooking in my kitchen… I’ve come to work out that the sauce was simply a mix of sesame oil, chicken soup stock, white pepper and light + dark soy all blended into one. It always tasted like magic!

And this is why I’ll always have a soft spot for Gai Lan. The taste of childhood Chicken Rice lunches!
